Ditalini Pasta With Vegetables Soup

Ingredients
- 1 cup Lamtna ditalini pasta
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 can (14 oz) diced tomatoes
- 8 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach, chopped
Instructions
- Cook Lamtna ditalini pasta according to package instructions. Drain and set aside.
- In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
- Add minced garlic, diced zucchini, and yellow squash. Cook for an additional 3-4 minutes.
- Pour in diced tomatoes and vegetable broth. Stir in dried thyme and oregano. Bring the soup to a boil, then reduce heat and let it simmer for 15-20 minutes.
- Season with salt and pepper to taste. Add chopped spinach and cooked ditalini pasta to the pot. Simmer for an additional 5 minutes until the spinach wilts.
- Serve hot.
