Ditalini Pasta With Vegetables Soup

Ingredients
  • 1 cup Lamtna ditalini pasta
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 can (14 oz) diced tomatoes
  • 8 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped
Instructions
  1. Cook Lamtna ditalini pasta according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.
  3. Add minced garlic, diced zucchini, and yellow squash. Cook for an additional 3-4 minutes.
  4. Pour in diced tomatoes and vegetable broth. Stir in dried thyme and oregano. Bring the soup to a boil, then reduce heat and let it simmer for 15-20 minutes.
  5. Season with salt and pepper to taste. Add chopped spinach and cooked ditalini pasta to the pot. Simmer for an additional 5 minutes until the spinach wilts.
  6. Serve hot.
